Our Leprechaun trap!! (and some yummy treats you can do..super easy)!!

St. Patrick's Day is almost here!  Don't forget your trap!!! Okay..I know a lot of people don't go crazy with this holiday..especially not as crazy as I go!  But...I love to..so here's what we started two years ago and will do again this year..trap the Leprechaun!!  

Right before bed, we set the trap...


The kids add a trail of Lucky Charms to lure him in..




And we wake up to this....little green feet....everywhere!!!!  He came..but wasn't caught!  He's too sneaky, little, and fast!!!



He went into the bathroom....


Ewww!! (the kids think this is hilarious)!! 


Then he went into the kitchen...

Into the fridge...

And drank our milk!!!  
 Then he went on the wall....
 Leaving them a yummy surprise!!!   
 The first year our leprechaun left these Licorice Rainbow treats!!  (a clear plastic cup, the short with the wide top works best, with some rolos on the bottom and the colored licorice on top like a rainbow...I just covered them with some saran wrap so it wouldn't dry out and get hard!) 

 Last year (I didn't get a close-up picture) but instead of the Licorice Rainbow, it was the Rainbow of Skittles!!! (a clear plastic cup..I used the taller, skinnier ones for these..with a layer of Rolos, then skittles separated into colors, a layer of red, then orange, yellow, green, and purple)!  Yummy! 
The kids have loved this new tradition and, though it's time consuming on my part, I really love seeing the joy on their faces!!  Even if you don't do the trap or the feet, these treats are super yummy and really easy!!

Fruit Rainbow

Welcome to our favorite St. Patrick's Day treat~ever!!!  The Fruit Rainbow is the best and every single piece gets eaten!!!  

Super simple..just takes time to peel and slice the fruit.  We use~
Red~strawberries
Orange~oranges
Yellow~pinapple
Green~green grapes
Blue~blueberries
Purple~purple grapes
The cloud is mini marshmallows and the gold at the other end is Rolos!  
 We tend to rotate our holiday treats..but this one we have every year and the kids eat it all up!!!  Yumm!!!

Lucky Charm treats

Mmmmm..Rice Krispie treats are such an American staple it seems!  I can withstand most sweets..but I'm totally a sucker for them!  Last year on St. Patrick's Day I decided to try a little twist on this amazingly chewy deliciousness!  

Simply replace the Rice Krispie cereal with Lucky Charms!  So good!!!  The kids enjoyed them but honestly, Cory and I were in love with this treat!!

*Lucky Charm treats*

Ingredients 
~3 Tablespoons butter
~4 heaping (seriously..overflowing) cups of mini marshmallows
~6 cups of Lucky Charm cereal

Directions
~Put the marshmallows and the butter in a large microwave-safe bowl.  Cook for 1 minute.  Stir. Then microwave for 30 second intervals, always stirring in between.  (Marshmallows and chocolate chips will often begin to melt but look "normal" until the motion helps agitate them and the melting happens).
~Stir in the cereal until very well combined.
~Place the mixture into a 9x13 pan lined with wax paper.  Use a rubber spatula to evenly spread it.  
~Let cool, cut, enjoy!!!

Rainbow cupcakes

These were some of the most fun treats to make and the kids loved them!!!  These are easy, but a little time consuming because of the dying of the cake and the layering of the colors.  

All I did was buy my favorite white cake mix.  I made the mix as directed on the box (always using egg whites so the yellow eggs don't tint the white cake even slightly~not that I know it does..I've just never risked it!!!!).  Then I split it into six different small bowls, as evenly as I could.  Red, Orange, Yellow, Green, Blue, Purple (yep..a rainbow..ROY G. BIV ;)  ) Then I put just a drop or two into each to color it. You really do NOT need a lot at all!!!!  Remember..too much changes the taste and it's nasty!!!!  You, of course, will need to do color blending for ones like purple and orange..but always start with the smallest amount of dye to color it!!  When you've done that, drop a spoonful, or a half, into the cupcake tins.  I always alternated which colors I did in what order so they weren't all the same rainbow.  Bake them as directed on the box for cupcakes!  Super easy!!!!!
I had white icing which I colored green then added mini marshmallows on top.  It was like the grass and clouds type of thing for the rainbow!  We had so many so we took some to friends of ours.  We're told their little girls loved them!!!  Yeah!!!!  


Seriously~make these for your kids!  They will love them and the surprise rainbow inside!!!!

St. Patrick's Day Pudding Surprise


I love holidays!!!  St. Patrick's Day isn't one that a lot of people go crazy for. But I do!  I love this holiday and my little, "favorite color is green" child thinks it's the coolest day!  One of my favorite desserts to make them is the Pudding Surprise!  
Looks pretty great right?!  It is!  It's a hit every time we make it!  Aaaaand..here's the surprise!!  

St. Patrick's Day Pudding Surprise:


Ingredients: 

Vanilla pudding
Green food coloring
Whip Cream or Cool Whip
Oreos
Rolos 
Green sprinkles
Clear plastic cups

First~make pudding as directed on the box, adding a drop or two to make it green (each drop makes it darker so how many drops you put in is up to you and how dark/light you want it)!  Put a Rolo in the bottom of each cup then instead of letting the pudding set in the bowl, spoon it evenly into each cup.  

Then~once it's set, you can pull it out, add a dollop (or two) of the Whip cream (or Cool Whip).  Throw on some green sprinkles, put in an Oreo, and you're all set!

The kids always enjoy this one, whether it's their first time or fifth!  Enjoy!!
